1. 5'-IMP·2Na·H2O can be widely applied in medicine, reagent, fine chemical industry, and additive of food fields, flavor enhancer etc.
2. 5'-IMP·2Na·H2O is obtained by decomposing and separating nucleic acid obtained from yeast; or by fermentation. It is mainly composed of 5'-guanylate disodium and 5'-inosinic acid sodium, and its properties are also similar to it. It is odorless and delicious, and has significant effect in combination with sodium glutamate. The synergy effect is greatly increased. Soluble in water, slightly soluble in ethanol and ether. The 5'-disodium uridine disodium and 5'-disodium citrate disodium have a weaker taste.
3. 5'-IMP·2Na·H2O is a flavor enhancer which performs as a disodium guanylate does, but only when present at approximately twice the level. see disodium guanylate.
4. Flavor potentiator in foods. Sodium Inosinate is a salt replacement flavor enhancer. Food additive.
