Dimethyl Sulfide (DMS) (CAS: 75-18-3) has an intense, unpleasant odor, wild radish, cabbage-like. It can be tolerated as a green vegetable note only at very low levels (0.1 to 1.2 ppm). Used as a food flavoring component. It can be used as a solvent for organic synthesis, polymerization and cyanation.

Aroma characteristics: caramel flavor, roasted meat flavor, roasted flavor, nut flavor. FEMA 3146. Scope of application: baked food, beverages, candy. Suggested dosage (ppm): 0.1-2.

Inhalation causes moderate irritation of upper respiratory system. Contact of liquid with eyes causes moderate irritation. Repeated contact with skin may extract oils and result in irritation. Ingestion causes nausea and irritation of mouth and stomach.
