3-Phenylpropionic Acid (Hydrocinnamic Acid) (CAS: 501-52-0) is a carboxylic acid that belongs to the class of phenylpropanoids, with a sweet fatty smell of rose musk cinnamon at room temperature. It is a fragrance fixative, food additives, cosmetics, is the stabilizer of spices, and can also be used as a pharmaceutical intermediate and in organic synthesis. Hydrogenation of cinnamic acid is used in the preparation of 3-Phenylpropionic Acid. Initially, the chemical was prepared by reduction with sodium amalgam in water by electrolysis.
